  1. In small pot, bring milk and water to a boil over medium heat. Add oatmeal, cinnamon, and nutmeg. Reduce heat to medium-low and simmer until liquid is absorbed, about 7 to 15 minutes, stirring occasionally.
  2. Once the liquid is absorbed, stir in pumpkin, and almonds, and sweetener (if desired); set aside.
  3. Combine water and protein powder in a separate bowl. Mix with a fork until protein is dissolved (may be easier to use blender).
  4. Pour protein mixture over oatmeal and serve.
  5. **Note:You do not need to use the entire Protein Powder mixture. Adjust it according to taste and liking.

  1. I made this recipe for breakfast and it was excellent. Who would have thought to add pumpkin to my oatmeal ? I will certainly be making this again but this time I will not add sugar because it was a tad too sweet for me. Thanks !

  2. This is the same recipe that I make at least twice a week. It keeps me full and satisfied until noon. I always make an extra portion and leave it in the fridge for up to 3 days – reheat and voila ! instant breakfast (or snack) !

  3. I eat this three times a week. Sometimes I add peanut butter instead of pumpkin – applesauce is good too YUM
