Sheri's Chicken, Zucchini & Tomato Skewers – Bariatric Edition

Ingredients
  

  • 1/2 Lemon (juiced)
  • 1 tbsp Extra Virgin Olive Oil
  • 2 tsps Raw Honey
  • 1 tsp CuminSea Salt & Black Pepper
  • 12 ozs Chicken Thighs (boneless, skinless, chopped)
  • 1 Zucchini (medium, chopped)
  • 1 cup Cherry Tomatoes
  • 6 Barbecue Skewers

Instructions
 

  • Preheat the grill to medium-high heat.
  • Mix the lemon juice, oil, honey, cumin, salt, and pepper together.
  • Thread the chicken, zucchini, and tomatoes onto the skewers. Brush the marinade onto the skewers and grill for three to five minutes on each side or until charred and the chicken is cooked through. Enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to three days.
Serving Size: One serving is equal to two 10-inch skewers.
More Flavor: Add minced garlic, paprika, and/or shallot to the marinade.
Additional Toppings: Minced mint and/or cilantro.
Wooden Skewers: Be sure to soak the skewers in water for at least thirty minutes prior to use.
