Ingredients
  

  • 1 1/2 Tbsps tbsps Extra Virgin Olive Oil
  • 1/2 Lemon (juiced)
  • 1 Tsp Honey
  • 1 1/2 Tsps Shallot (diced)Sea Salt & Black Pepper (to taste)
  • 4 Cups Mixed Greens
  • 1 Cup Raspberries (plus extra for garnish)
  • 1/2 Avocado (large, sliced)
  • 1/3 Cup Goat Cheese (crumbled)

Instructions
 

  • In bowl, whisk together the oil, lemon juice, honey, shallot, salt, and pepper.
  • Arrange the mixed greens, raspberries, avocado, and goat cheese on a serving platter. Drizzle with dressing and enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to two days.
Serving Size: One serving is equal to approximately 2 1/2 cups of salad.
Make it Vegan: Omit the goat cheese or use a plant-based cheese instead.
