Sheri's Ham & Cheese Egg Cups

Ingredients
  

  • 1/2 oz Sliced Ham (one slice per eggcup)
  • 1/2 oz Cheddar Cheese (shredded)
  • 1 Egg (large)
  • Sea Salt & Black Pepper (to taste)
  • 1 tsp Chives (chopped)
  • 1/2 Tomato (sliced)

Instructions
 

  • Preheat the oven to 400°F (205°C). Grease or line a muffin tray or use a silicone muffin tray.
  • Line each cup with a slice of ham and top with cheese. Crack one egg into each ham cup and season with salt and pepper.
  • Bake in the oven until the eggs are cooked through, about 12 to 15 minutes
  • Top with chives and serve with the sliced tomato. Enjoy!

Notes

Leftovers: Refrigerate in an airtight container for up to three days.
Serving Size: One serving is one egg cup and half of a tomato.
Additional Toppings: Hot sauce and/or other fresh herbs.
