  1. Preheat Outside Grill on Medium High setting when you start your prep.
  2. Pat tuna steaks with paper towels to remove excess moisture then place in a shallow dish.
  3. Mix all spices with oil and lemon juice in a small bowl with a fork or wisk. Allow to rest for at least 5 minutes to blend together.
  4. Brush mixture on both sides of Tuna steaks and allow steaks to rest for another 5 minutes.
  5. Grill steaks on hot grill 2-5 minutes on each side to attain desired doneness. For well done there should still be some pinkness to the center. Most prefer barely warm red centers. Be Brave, you will be surprised at the flavorful moistness and un-fishyness of this Tuna!
  6. Overcooking to a uniform color would be a sad waste of a great dish!

  1. Saute onions and peppers in oil.
  2. Add tomatoes and olives
  3. Beat eggs and egg whites together with 1/3 cup of water.
  4. Add to vegetable mixture.
  5. Sprinkle with dried or fresh basil.
  6. Cover and cook on medium to low heat for approximately 5 minutes.
  7. Add feta cheese and either continue to cook as is (until egg is set) or flip in half to form traditional omelette.
  8. Enjoy.

  1. Saute pork in 2 tbsp olive oil until lightly browned. Remove from pan and set aside.
  2. Add peppers and onions to the pan and saute until they start to become tender.
  3. Add chicken broth and return the pork to the pan.
  4. Cook an additional 15 minutes or until pork is no longer pink and remove from pan.
  5. Stir 2 tbsp corn starch into cold water together thorougly and add to pan and cook until slightly thickened.
  6. Add sea salt and pepper to taste. Enjoy

  1. In a large pot, saute onions and mushrooms in olive oil until tender.
  2. Add ground beef and garlic, stir and break up the meat until cooked through.
  3. Add canned tomatoes, kidney beans, chili powder and salt. Mix well and bring to a boil.
  4. Simmer over low heat, with occasional stirring, for at least two hours.
  5. Optional : Serve over rice with avocado, shredded cheese, and sour cream for toppings.

  1. Saute your onions mushrooms and zucchini for a few minutes.
  2. Add ground turkey and cook on medium, until browned / drain.
  3. Pour into crock pot and add all remaining ingredients. Fill to top with water and cover cooking on high for 4 hours, or on low from 6 to 8 hours.

Makes aprox 14 cup servings. Freezes well. Susbstitute vegetables as you like.
